I've heard of that place. My daughter lives near Plano. I'll have to check it out.

They are proud of their stuff...but rightfully so.
They make all thier own sausages, they have all types of hard to find smoking woods, they do their own dry aging...and they will bend over backwards to make make you happy.

If you go, dont leave without:

at least one nice fat steak
a couple of their butterflied pork chops
a few brats and a few andouille sausges.

The only thing I have ever found there that I didnt think was great was the Italian sausages.

I only like pork loin if its bone in and preferably the blade end. Boneless tends to be dry in my opinion.

I had it in a brine since about 8pm Saturday.
Salt, brown sugar and garlic.
Turned out really juicy.

I have not. I get my Tri Tip from a butcher in Plano (Hirsch's...LOVE that place if you are ever in the area) when he puts them on sale. I dont cook them whole tho...I cube it up and serenade it. Somewhere between steak tips and kabob size.

Ive never been to Costco, but do they butcher it or just sell the meat in the cryovacs? its really doesnt matter but you want Choice beef should be the standard anywhere you shop.

The Italian pork that Guy LaDouche made last night... mine is almost the same except with white wine/chicken broth instead...

It smells like pancetta, pork, fennel pollen, wine and rosemary in here right now.
