tossed with olive oil and salt in a roasting pan on the stove and put in the oven at 375
turn every 15 minutes for an hour
put some chopped onion in that and I'm down to eat it

i usually just rough chop and roast potatoes when i do it, but i know as a "restaurant tip," some people par-boil before roasting. but par-boil is only like for 5-10 minutes. not until they're ready for mashing.

Aha!! Sometimes I soak them in water and change the water to remove some of the starch, to make them crispier. But truth be told, I just cut to the chase and throw the damn things in a roasting pan most days.
