And while I'm a fan of the sport, In my opinion there's no way that MMA could be a part of the Olympics, boxing barely can and MMA is way more brutal. There wouldn't be enough recovery time in between bouts for any quality fights.

Maybe they could fight under Pancrase rules. Shin protection, open handed striking only etc. Lots of great MMA fighters like Bas Rutten, Frank Shamrock and Evan Tanner first got their start in Pankration. Besides, Pankration appeared in the Greek Olympic Games all the way back in 648 BC so it's got tradition going for it as well!
