    Meyer Lemon Vinaigrette

    Ingredients: ½ cup fresh Meyer lemon juice
    2 tablespoons red wine vinegar
    2 garlic cloves
    1 tablespoon whole grain prepared mustard
    1 tablespoon dried Italian herbs
    2 tablespoons honey
    1 tablespoon sugar
    1/2 teaspoon sea salt
    1¼ cups extra virgin olive oil

    Directions:
    1. Combine all ingredients except oil in a blender. Pulse a few times to chop garlic thoroughly and mix ingredients together.

    2. With the blender on low speed, slowly add olive oil to the mixture in a steady stream until completely blended. Drizzle over your favorite salad.

    Mmmmmmmmmmmmmm. I've always wanted to make this "Lazy Lemon Tart" that floats around the internet. Everyone says it's really good and easy. You use the whole meyer lemon, rind included. Yummm.

    Huge fan of Meyer lemons. We had them in OC and introduced them to Roatan (as far as I know).

    wow, that is suuuper easy. i may have to try this!

    Serves 1 tart

    • 1 large meyer lemon cut into 8 pieces
    • 1 1/2 cup superfine suger
    • 1 stick butter
    • 1 tsp vanilla
    • 4 eggs
    • your favorite tart shell


    1. Put all ingredients (except tart shell) into a blender and whirl like crazy!
    2. Pour into tart shell.
    3. Bake 40 minutes at 350 degrees (watch that the top does not burn

    i saw they grow great in containers an produce thousands a fruits in 4 years. i think i am going to germinate some a the seeds from these lemons i have an plant one or two in posts in my office.

    Hey Dink, can you really eat lemons? I cannot, love them as a side garnish or a splash of flavor, but no way can I eat them solo. Oddly enough my nephew can, one after another without ever wincing, but he is a marine.

    We had two in the ground in OC. One grew big and produced a ton in a few short years. The other was funky and we thought it was dead. Wouldn't grow, no lemons, nothing. Then one year it just went berserk and from then on we had more lemons than we knew what to do with. We used them for cleaning, in the garbage disposal, everywhere. And we gave tons away. We had many friends in those days
