    Indian Food for Starters

    I like to think I know alot about cooking and food in general, but what I know about Indian food could fit in a thimble.
    I dont know about curries or anything like that. I always just associated it with the nasty smell that some Indian people carry with them at all times....gross.

    Last night I tried Chicken 65. I was told this was very basic Indian food....but that shit was AMAZING. It had the nan bread and cilantro & onion and lemon on the side. It wasnt swimming in some neon sauce and it didnt smell like an Indian guys apartment.

    What are some other good basic Indian foods to start of with? I will be going back & getting some of this Chicken 65 fa sho.

    Try the pakoras as an appetizer. Most Apus are vegetarian so expect a lot of bean & vegetable dishes.

    I like the spices and I like the saucy shit and I know how to cook it, but I don't think I can help you.
    Seems you like the drier dishes.
    Samosas are delicious. Tandoori chicken is juicy but not saucy. That's all I got for now, besides Buddha's recommendations.

    ask to try some phaal. it's a curry. doesn't matter if it's chicken, lamb, or mahogany because you won't be able to taste the meat anyway. have some whole milk near you also; you'll need it.

    an authentic place here has a phaal challenge meal. you finish it within 4 min (if at all) and you get a free beer, a certificate that you finished it, and your picture in an online gallery of other strange individuals able to eat phaal without requiring a trip to the ER.

    my partner from the UK loves phaal. we went for some last month. his wife and i were along in case he needed medical attention (I had chicken tikka marsala - i'm not crazy). the other indians at the restaurant were staring at him the whole time. he got the certificate and his photo on their webpage.

    The sweetest mangos in the world are called Alfonsos BUT they're from India. Right now you'll get Ecuadorean/Peruvian mangos but during the summer keep it in mind in case your dothead restaurants out there import Alfonsos. They smoke any other variety on the market if you can find them.

    I used to cook Indian food often.

    Some faves in my repertoire:

    - Saag panir (make the panir from scratch, you'll thank me later.. yum!!).
    - Basmati rice with peas
    - pooris (another bread)
    - burfi (dessert)


    You'll need to get the following utensils to make the above:

    cheesecloth for the panir.

    wok and slotted ladle (like below) for the pooris.

    Drier...I think you hit the nail on the head. Until I get I eat it some more...I feel safer sticking with the drier dishes. What is that smell I have burned into my brain that I want to avoid so bad?

    That's Saag Panir (which I mentioned above). It's delicious, especially if made from scratch!

    They use a lot of fennel, cumin, termeric, etc.
    btw I don't eat Indian food anymore. After 2 weeks over there I am forever scarred psychologically, emotionally, and subconsciously
