    I bought Mrs. Lemmy a set of Wusthof knives when she got her MBA about 7 years ago. I think they are the "Classic" series. It was about $800 for the chef knives then buying a few seperate pieces and matching steak knives. I picked them because I was sick of getting cheap, crappy knives. These feel good in your mitts, are balanced nice, the handles are sturdy, full tang blades and maintain their cut with just an occasional touch up with the hone. Rock solid reviews (at the time....no idea now), other quality brands in my price range seemed to be having quality issues at the time. I love 'em.....no regrets.

    I'm slowly building up a collection of Shun kitchen knives. You could shave with those things they are so sharp.


    I only have a chef's knife and a santoku right now....next is a cleaver.

    I don't even know the brand I have, they're forged steel, and I use a sharpening stone whenever I use them

    Hmm. I do like the japanese ones but I want a more wood than plastic handle. Lemmy I also have seen a lot of good comments about the brand you have, but they are out of my price range at the moment

    They were outta mine too!

    My advice......

    Find a knife you like even if they are expensive and just buy it by the piece over time. A quality set without a huge outlay at once and they'll last forever. I'm not trying to spend your money but if you buy something you aren't happy with or the quality is "meh" you'll just replace them eventually anyway. That is assuming you like to cook and are planning on using them often. I could get by with a few steak knives and one or two big cutters which is cheaper than a full set of replaceable knives.     We actually just picked up a cheaper Oster while in the US on vacation. I figure we'd have it till we moved next year and in the interim I can learn what we use it most for and what features are must haves on an upgrade when we move. You certainly have not given any bad advice, and lots of food for thought!! Except the super pricey knives, I can't afford to think about them

    I like them. They seem to make top quality stuff, and they have a design relationship with Ken Onion so their models range from classic jap to the most innovative shapes. also Amazon runs deep sales on individual pieces all the time.

    I use a spyderco kit to sharpen my blades very easy and does a great job.. Great knives too.

    I prefer the Wusthof ... just so I can pronounce them "VOOSTOFF" and act like a pretentious ass whenever I break em out. They hold an edge well.
