    This isn't a recipe that I created, but it looked so great to me that I saved it....

    S'mores Brownie Bars

    1 cup graham cracker crumbs (made from 10 rectangular crackers)
    12 tablespoons (1 1/2 sticks) unsalted butter
    1/2 cup plus 1 tablespoon sugar
    Salt
    1 cup bittersweet chocolate chips
    2 large eggs, at room temperature
    1 teaspoon instant espresso powder
    1 1/2 teaspoons vanilla extract
    1/4 cup all-purpose flour
    3/4 teaspoons baking powder
    3 cups mini-marshmallows

    Procedures

    1

    Adjust oven rack to middle position and preheat oven to 350°F. Cut two 16-inch pieces of
    foil and line an 8-inch square baking pan, allowing excess to hang over sides. Spray with
    nonstick cooking spray.

    2

    Break graham crackers into small pieces and pulse in food processor until they become
    fine crumbs. Melt 4 tablespoons butter. Add melted butter, 1 tablespoon sugar, and 1/4 teaspoon
    salt to crumbs and pulse to combine. Press into bottom of prepared pan.

    3

    Melt chocolate and remaining 8 tablespoons butter in medium bowl in microwave, 1 to 2
    minutes, stopping every 20 seconds to stir with rubber spatula. Transfer mixture to a large
    bowl and cool, stirring occasionally, for 10 minutes.

    4

    With a wooden spoon, mix in the remaining 1/2 cup sugar, eggs, espresso powder, vanilla,
    and 1/4 teaspoon salt. Add the flour and baking powder and mix until smooth.

    5

    Pour batter into prepared pan. Bake for 25 to 30 minutes, until a toothpick inserted
    into the center of the brownies comes out with moist crumbs attached. Do not over-bake.
    Transfer to cooling rack and top with marshmallows.

    Adjust oven rack to upper third position and heat broiler. Broil until marshmallows
    are golden brown, 1 to 3 minutes. Cool in pan 1 hour. Using foil sling, transfer directly
    to wire rack and let cool completely, at least 1 hour. Cut into 2-inch squares and serve.

    I just made those yesterday! They're very cute. (They're almost exactly like rice krispie treats, except with cornflakes instead of rice krispies)

    Saved this one too...its from Martha Stewart's company...

    Banana Whoopie Pies...

    2 cups all-purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup mashed banana (from 1 large ripe banana)
    1/2 cup sour cream
    4 ounces (1 stick) unsalted butter, softened
    1/2 cup granulated sugar
    1/2 cup packed light-brown sugar
    1 large egg
    1 teaspoon pure vanilla extract
    16 ounces cream cheese, softened
    1 cup confectioners' sugar, plus more for dusting

    Directions

    Preheat oven to 350 degrees. Line 2 baking sheets with parchment. Sift flour, baking
    powder, baking soda, and salt into a bowl. Combine banana and sour cream in another bowl.

    Beat butter and granulated and brown sugars with a mixer on medium-high speed, until
    pale and creamy, about 3 minutes. Add egg and 1/2 teaspoon vanilla, beating until incorporated.
    Add banana mixture in 2 additions, alternating with flour mixture.

    Transfer batter to a pastry bag fitted with a 1/4-inch plain tip. Pipe batter into
    1 1/4-inch rounds on baking sheets, spacing rounds 1 1/2 inches apart.

    Bake until edges are golden, about 12 minutes. Slide parchment, with cookies, onto wire
    racks. Let cool. (Unfilled cookies can be stored for up to 1 day.)

    Beat cream cheese, confectioners' sugar, and remaining 1/2 teaspoon vanilla with a mixer
    on medium speed until smooth, about 2 minutes.

    Pipe or spoon 1 tablespoon cream cheese mixture onto the flat sides of half the cookies.
    Sandwich with remaining cookies. Dust with confectioners' sugar, and serve immediately.

    It could be totally awful, EC...I created it thinking the two sounded good together, but its untested.

    It doesn't sound very tasty, but damn those are the most "Christmassy looking" cookies I've ever seen.

    I almost bought some Red Hots on impulse the other day.....I ate them by the pounds when I was a kid.....

    use a basic oatmeal raisin cookie recipe, substitute dried cranberries for the raisins and add the zest and juice of one orange

    I love Oatmeal Scotchies... recipe is usually on the bag of butterscotch chips. OM NOM NOM
